3 small red russet potatoes cut into bite sized pieces
1 green pepper
1 small white onion
1/2 lb bacon
7 medium sized eggs
1/2 cup milk
3 tablespoons hot sauce (I used more than this but for a sensitive tongue i suggest 3)
1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup vegetable oil
1 cupcake pan (12 cups)
1/2 cup shredded cheddar cheese
i first started by cooking the bacon. cutting the green pepper. onion and potatoes in the meantime. once the bacon was done i drained nearly all of the grease. about 2 tablespoons of grease should remain. place cut potatoes in pan and sprinkle with half of the chili powder and salt. i also sprinkled a dash of all purpose seasoning. cook on medium to high heat for about 30 to 40 min. stirring occasionally. i drained all grease and rinsed the pan about 10 min before ending cook time. i let the potatoes drain and placed back in pan to remain cooking.
meanwhile take your cupcake pan and spray slightly with cooking spray. although i forgot to spray they didnt stick to bad.
cut bacon into small pieces and place in bottom of cupcake cups. top with green pepper and onion. i also sprinkled a bit of cheddar cheese.
mix hot sauce eggs spices and milk and spoon into cups. fill cups about half way. sprinkle with remaining cheddar cheese.
bake for 15 min at 375.
potatoes are optional as a side.
i also think this would be good in an oversized muffin pan of 4. while adding red peppers and yellow peppers.. or even sliiced ham and cubes of american cheese. so many combinations i cannot wait to try more! And for the record it was a hit with the Mr. .. always a good sign when you are making your way to their heart through their stomach!
